THE ORIGIN
We went to visit our friends at Hollingbery last fall in Southeastern Washington. Yakima, in case you didn’t know, is the heart of hops. It’s also one of the world’s leading producer of apples! While we were there, we got to rubbing, tasting, and sniffing all the different kinds of hops, as brewers do. After some time, all of us kept being drawn to hops that derived from Idaho.
So for this collab we did indeed bring in hops from Idaho at the request of Virgil Gamache’s resident hop scientist, Tim Wallen. With consultation from our hop representative from Hollingbery, Radin King, we settled on varying crop years from multiple farms to really show the best of the best. With Zeus, Amarillo, Comet, & Cashmere hops, Parma the Wilder IPA gives notes of red berry, stone fruit and pine upon a citrusy backbone.
THE NAME
Parma is the town where all of these hops were grown and Wilder is the county in which that town resides, well known amongst the hop community (not so much average folks). We really are in love with this beer and hope you get a chance to enjoy it as well. Hooray for badass hop providers!
