Kevin’s Coconut Relapse Story
I’ll admit it: I’m a big fan of coconut.
Back in the early days of Alibi, the team used to give me a hard time because I was constantly trying to sneak coconut into new beers. Coconut Porter. Coconut Brown. We even brewed a Coconut White IPA at one point (for the record, it was damn good). Yeah… I may have had a bit of a problem.
So after what can only be described as an intensive coconut rehab program (out-patient), I took a few years off from brewing anything with coconut.
But eventually, the cravings came back.
And when they did, we decided not to ease back in – we went all the way. We took our beloved Alibi Porter and supersized it into a decadent Imperial Porter, then added a mountain of toasted coconut near the end of fermentation and let it condition for two more weeks until everything melded together beautifully.
The result is a beer loaded with fudgy chocolate richness, deep roasted malt, and a silky coconut finish that somehow feels like a beach day in the middle of winter. We’re calling it Tropic Thunder – a full-send tropical storm of coconut and dark malt in your glass.
Subtlety is overrated.
